Ingredients

  • 2 cups All purpose flour
  • 1 1/2 tsps. Baking soda
  • ¼ tsp. Salt
  • ¾ cup Margarine
  • 1 cup Granulated sugar
  • 2 Eggs
  • 1 tbsp. lime zest
  • ½ cup CARNATION Coconut Evaporated Milk
  • 1 tsp. Vanilla essence
  • 1 cup Mango puree
  • ½ cup Chopped Walnuts

Instructions

    1. Preheat oven to 375˚F (180˚C). Grease a 9” x 5” loaf pan

    2. Sift together flour, salt and baking powder.

    3. Cream margarine and sugar until light and fluffy. Add eggs and beat well.

    4. Incorporate flour into butter and sugar mixture.

    5. Fold in remaining ingredients.

    6. Pour batter into prepared pan and bake for 45 minutes or until pick comes out clean.
