Chop chicken into small pieces and season with pepper, garlic and season up.
In a frying pan heat oil and sauté half of the escallion and half of the onion for about 1 minute.
Add chicken and allow to cook through for about 20 minutes.
Add carrots and cook through for 2 minutes.
Add remaining onions, sweet peppers and heat through for 2 minutes.
Add remaining escallion, stir and remove from heat. Serve with side dish of choice.
