Season the rack of lamb with garlic, pimento / seasoning peppers, thyme, olive oil and Season Up. Leave to marinate

In a bowl, mix parsley, mint / thyme and breadcrumbs. Set aside

Spread mustard on the meaty side of the rack of lamb

Then pack the breadcrumb mixture onto the meaty side of the rack of lamb.

Place lamb, meaty side up in a preheated oven at 375°F (190°C).

Bake for 25 – 30 minutes or until done to desired liking.

Let lamb rest for 15 minutes before carving into chops.
