Grilled Vegetable Pasta Salad

Ingredients

  • 250 grams Pasta of your choice
  • ¼ cup Olive oil
  • 2 tbsps. Lime juice
  • 1 pk. MAGGI Season Up All Purpose
  • 1 small Eggplant, sliced lengthwise approx. 1 “
  • 1 Red sweet pepper, cut in half and seeds removed
  • 1 med. Onion, cut in half
  • 1 Zucchini, sliced lengthwise approx. ½ “

Instructions

    1. Cook pasta according to packaged directions and set aside.

    2. In a bowl, mix olive oil, lime juice and Magic Chef to make marinade.

    3. Brush marinade onto vegetables and reserve remaining marinade.

    4. Grill vegetables for 5 minutes on each side.

    5. Remove vegetables from grill and allow to cool.

    6. Cut vegetables into cubes, then toss with pasta and remaining marinade.
