Blend all ingredients for Dressing until thoroughly mixed. If dressing is too thick, add a little more water.
Mix all ingredients for marinade in a medium bowl. Toss in washed and de-veined shrimp and marinate for 30 minutes
Wash and dry lettuce leaves. Tear leaves into bite-sized pieces and toss with dressing.
In a grill pan cook shrimp on medium high heat for 2 minutes on each side or until pink and curled.
