Ingredients

  • 2 lbs Green plantains
  • 1/4 cup Sweet peppers, finely chopped
  • 2 tbsp Pimento peppers, finely chopped
  • 1/4 cup Onion, finely chopped
  • 1 tbsp Garlic, finely chopped
  • 1 pk MAGGI Season Up All Purpose (10g)
  • 1/4 cup Salt fish, boiled and flaked
  • 1 cup oil

Instructions

  1. Peel the green plantain then diced into small pieces.

  2. Boil until plantain is tender. Drain and place plantain in a large bowl.

  3. Use a fork or potato masher to mash plantain.

  4. Mix in the sweet peppers, pimento peppers, onions, garlic, Season Up All Purpose and saltfish. Combine well. Place in refrigerator and chilled for 10 minutes.

  5. Take a spoon and scoop up a ball then flatten to about half an inch.

  6. Fry in oil over medium heat until they are golden brown

  7. Serve hot.
