Fall Off the Bone Oxtail and Beans

  • 2 Pounds Oxtail (trimmed and rinsed in vinegar and water )
  • 2 Packs Maggi Season-Up! All Purpose Powdered Seasoning 10G Sachet
  • 3 Tablespoons Vegetable Oil
  • 2 Stems Escallion (chopped)
  • 1 Tablespoon Soy sauce
  • 2 Cups Water
  • 1/4 Tablespoon Pimento Berries
  • 1/4 Cup Onion finely chopped
  • 2 Sprigs Thyme
  • 2 Pieces Garlic crushed
  • 1/2 Cup Carrot (cut into rings)
  • 1/4 Cup Sweet Peppers (cut into strips)
  • 1 Can Broadbeans (drained)
  • 1 Teaspoon Brown Sugar


  1. Season oxtail with half of the fresh seasonings, MAGGI Season-Up All Purpose and soy sauce; allow to marinate overnight or for 2 hours.

  2. Heat pot over medium flame; add oil and allow to get hot. Add oxtail, saute in oil until oxtail browns on both sides.

  3. Pour water over meat, cover pot and allow to cook (check every 5-10 minutes and add hot water a little at a time during cooking time).

  4. Reduce heat to low, allowing meat to simmer until soft. (if using pressure cooker, put enough water to cover meat and pressure for 20 minutes).

  5. Add the remaining seasoning, carrots, sweet pepper, sugar and continue cooking for 15 minutes or until meat is very tender and gravy thickens; add broad beans and stir. Remove from heat. Serve hot with staple of choice.
