Boil Eddoes until tender, peel.

Place peeled eddoes in a medium bowl. Using a potato masher, mash eddoes.

Add sliced onion.

Heat oilwith garlic in a ladle until oil is very hot. When oil is hot add crushed Bouillon cubes.

Very carefully pour oil onto mashed eddoes. Mix thoroughly.
