Truffle Fairy Cakes

Truffles are used exclusively as an ingredient in gourmet meals. The most popular varieties are white truffles, which are more aromatic, and black truffles, which have a more intense flavour. Black truffles are recommended for this recipe because of their ability to resist the high temperatures of the oven. Like all fungi, truffles are rich in vitamins and minerals and
low in fat and calories.

  • 200 Grams Butter
  • 245 Grams Flour
  • 120 Grams Icing Sugar
  • 10 Grams Baking Powder (Royal)
  • 4 Units Eggs (Large)
  • 100 Grams Honey
  • 0.5 Gram Salt (Pinch)
  • 10 Grams Natural Truffles (Preserved)


  1. Melt the butter in a saucepan on medium heat or place in the microwave for two minutes. Set aside.

  2. Mix and sift the icing sugar along with the flour and the baking powder.

  3. Beat the eggs together with the honey, salt and the diced truffles.

  4. Add the butter. Stirring continuously, add the sugar, flour and baking powder mixture prepared earlier.

  5. Leave to stand in the fridge overnight

  6. Distribute the dough into several cupcake cases and bake in the oven at 190°C for eight minutes.
