Green Tea and Lime Mousse

  • 200 Grams Nestlé Cream 300G Tin
  • 3 Units Egg Whites
  • 75 Grams Sugar
  • 1 Pack Gelatin 5 Leaf Sheets
  • 1 Tablespoon Lime Zest
  • 1 Gram Green Tea
  • 150 Grams Honey
  • 1/8 Liter Water
  • 15 Grams Mint Leaves A Few Leaves


    1. To make the mousse

      Whip the cream and set aside in the fridge.

    2. To make the mousse

      Heat the egg whites and the sugar in a bain-marie until the sugar has dissolved, making sure that the egg white doesn’t cook. While the mixture is still hot, add the sheets of leaf gelatin previously soaked in cold water and mix until they dissolve.

      Beat this meringue mixture until it stands up in stiff peaks. Once whipped, mix with the cream using a spatula and fold so that it stays as fluffy as possible and doesn’t flatten. Add the green tea and the lime zest.

      Finish mixing and place the mixture in a tray lined with cling film. Keep in the fridge until it sets, then cut into cubes and set aside.

    5. To make the caramelized honey syrup

      Pour the honey into a saucepan and let it reduce on the hob until it starts to toast slightly; this will strengthen the flavour. Next, gradually add the water so that it will be absorbed by the honey. Set aside.

    6. To make the caramelized honey syrup

      Serve the syrup in the bottom of a glass tea cup and top with a few scoops of the green tea and lime mousse. Top with a few mint leaves.
