Decadent Opera Cake

  • 1 box (18.25 ozs.) Yellow cake mix
  • 1 cup CARNATION Full Cream Evaporated Milk
  • ½ cup Butter, softened
  • 3 med. Eggs
  • 2 tsp Almond essence
  • ½ cup Ground almonds
  • ½ cup Unsalted butter, softened
  • 1 cup Cream cheese, softened
  • 1 ½ cups Icing sugar
  • 1 ½ tsp NESCAFÉ Instant Coffee
  • 1 tbsp CARNATION Full Cream Evaporated Milk, warmed
  • ¼ cup Granulated sugar
  • ½ cup Hot water
  • 2 tsp NESCAFÉ Instant Coffee
  • ¼ cup Coffee liquor
  • 10 ozs. Semi-sweet chocolate chips
  • 1 cup Heavy cream
  • 3 tbsp Unsalted butter


  1. Using an electric mixer, beat all ingredients for cake until combined well.

  2. Pour batter into a parchment lined, greased and floured baking sheet tray / jelly roll pan

  3. Bake in a preheated oven at 350°F (180°C) for 15-20 minutes or until a toothpick inserted in center comes out clean. Cool in pan on wire rack until completely cool

  4. Prepare the coffee buttercream using an electric mixer to beat softened butter, softened cream cheese and icing sugar. Dissolve coffee in warm milk and incorporate into buttercream. Set aside.

  5. In another bowl combine ingredients for coffee syrup and set aside.

  6. Prepare chocolate ganache by heating cream until almost boiling. Pour hot cream over chocolate chips and let stand for 30 seconds, then stir. Whisk in butter until completely mixed. Let cool until spreading consistency.

  7. To assemble, cut cake in half and then cut each piece in half. Place one piece of cake onto a cake stand / platter. Brush cake with coffee syrup and using a spatula spread ¼ a thin layer of chocolate ganache. After spread ¼ of the coffee buttercream over the ganache

  8. Place another piece of cake on to and continue layering in the same order.

  9. Spread remaining ganache over top and sides of entire cake. Refrigerate until ganache sets, about 1 hour.

  10. Garnish as desired.
