Curried Green Banana

Ingredients

  • 1 tbsp. Oil
  • 1 medium Onion, finely chopped
  • 1 tsp. Minced garlic
  • 1 tsp. Curry powder
  • 2 medium Tomatoes, chopped
  • 6 grains All spice / Pimento berries
  • 4 fingers Green bananas
  • 1 pk. (50 g) MAGGI Coconut Milk Powder (dissolved in 2 cups water)
  • 2 MAGGI Vegetable Bouillon Cubes
  • 1 sprig Thyme
  • 2 tbsps. Chive / escallion, finely chopped

Instructions

  1. Heat oil and sauté onion, garlic, curry powder and tomatoes until onions are translucent.

  2. Add green bananas and cook for 5 minutes until lightly browned.

  3. Pour in coconut milk and crumbled cubes and thyme.

  4. Continue cooking until sauce thickens (about 20 minutes).

  5. Sprinkle in chopped chive / escallion.

  6. Serve with your favourite meat or bean dish.
