  • 6 Hard boiled eggs, shelled
  • 2 Tablespoons Vegetable oil
  • 1/2 Cup Onion finely chopped
  • 2 Teaspoon Garlic minced
  • 3 Tablespoons Pimento pepper finely chopped
  • 2 Tablespoons Curry powder
  • 1/2 Cup Water
  • 1 Pound Potato peeled and cubed
  • 1/2 Cup Tomatoes chopped
  • 3 MAGGI Garlic Onion Bouillon Cubes
  • 1 Hot pepper, scotch bonnet
  • 1 Cup Water


    1. Fry eggs in hot oil until brown in a medium sauce pan; remove from oil and set aside.

    2. Add onion, garlic and pimento peppers to oil and saute for one minute.

    3. Mix curry powder with 1/2 cup water and add to pot. Cook for two minutes or until thicken.

    4. Add potatoes, tomatoes, MAGGI Onion and Garlic Cubes, pepper and water. Cover, bring to a boil and simmer until potatoes are tender.

    5. Return eggs to pot and cook for two minutes.
