In medium sauce pan, heat butter and sauté onion, flour and eggplant for 5 minutes.
Add dissolved Bouillon Tablets, paprika and tarragon. Stir and cook for 15 minutes.
Remove from heat, blend and strain.
Add sour cream, stir to incorporate and serve.
