Creamy Eggplant Soup

  • 2 tbsps. Butter
  • ½ cup Chopped onions
  • 3 tbsps. Flour
  • 4 cups Peeled and diced eggplant
  • 2 MAGGI Chicken Bouillon Tablets dissolved in 4 cups hot water
  • ½ tbsp. Paprika
  • ½ tbsp. Tarragon
  • ½ cup Sour cream


  1. In medium sauce pan, heat butter and sauté onion, flour and eggplant for 5 minutes.

  2. Add dissolved Bouillon Tablets, paprika and tarragon. Stir and cook for 15 minutes.

  3. Remove from heat, blend and strain.

  4. Add sour cream, stir to incorporate and serve.
