Caribbean Seafood Kebabs

Ingredients

  • ½ cup Olive oil
  • 2 pks. MAGGI Season Up Fish
  • 2 tsps. Minced garlic
  • 2 Pimento peppers, finely chopped
  • 1 tbsp. Finely chopped Chadon Beni
  • 1 tbsp. Finely chopped chive / escallion
  • 1 tbsp. Lime juice
  • 1 tbsp. Finely chopped parsley
  • 1 lb. Medium shrimp, deveined
  • 1 lb. Fish fillets of your choice, cubed
  • 1 Purple onion, cut into quarters
  • 1 Sweet peppers, cut into chunks
  • 1 tin Pineapple chunks
  • 1 cup Cherry tomatoes / 4 tomatoes quartered

Instructions

    1. In a medium bowl, mix olive oil, Season Up, minced garlic, pimento peppers, Chadon Beni, chive, lime juice and parsley.

    2. Add shrimp and fish, toss to mix thoroughly. Leave to marinate for 15 minutes in fridge

    3. Thread seafood onto skewers alternating with onions, sweet peppers, pineapple chunks and tomatoes.

    4. Grill or barbeque over medium high heat until desired doneness. Turning occasionally to prevent burning.
