In a baking dish place plantain, orange juice and cinnamon bake for 30 minutes in a preheated oven at 375°F.
In a large saucepan, heat Evaporated Milk, Sweetened Condensed Milk and stir until incorporated. Whisk a small amount of the hot milk mixture into the eggs to temper. Add eggs to the pan slowly, whisking constantly. Continue to cook over low heat, stirring constantly until mixture thicken or it coats the back of a metal spoon.
When plantain is baked, place in a food processor and process until smooth.
Add the plantain to the custard mixture and place the pan in a bowl of ice water to cool.
Place in an ice cream maker and follow manufacturer's instructions.
Serve right away or place in freezer until ready to serve.
