Berry Good Corn Cakes

  • 1/2 Cup Cornmeal, Whole-Grain, Yellow
  • 1 3/4 Cup All Purpose Flour
  • 1 Tablespoon Baking Powder
  • 1 Teaspoon Salt
  • 1 1/4 Cup CARNATION® Full Cream Evaporated Milk 330ml Carton
  • 2 Tablespoons Vinegar
  • 1/2 Cup Margarine
  • 1 1/4 Cup Nestlé Sweetened Condensed Milk 395G Tin
  • 2 Units Eggs (Medium sized)
  • 1 Tablespoon Vanilla Essence
  • 1 Can Pie Filling ,Flavour of your choice


  1. Mix cornmeal, flour, baking powder and salt into a mixing bowl and set aside

  2. In a measuring cup, mix vinegar with Evaporated Milk and set aside (it will thicken).

  3. Using an electric mixer, cream margarine and Sweetened Condensed Milk. Then add eggs and vanilla essence and mix to incorporate.

  4. Alternately add some flour mixture and some milk mixture to creamed margarine mixture until everything is incorporated.

  5. Place 1 table spoon of pie filling into each section of a greased and floured cupcake tin.

  6. Over pie filling, fill sections with cake batter until they are ¾ full.

  7. Bake in a preheated oven at 350°F (180°) for 20-25 minutes. Remove from oven, let cool for 5 minutes and turn out onto a platter.

  8. Serve warm.
