In a heavy pot, heat water, sugar, grated coconut and cinnamon stick.
Cook until all the liquid evaporates.
Add crushed pineapple and cook for 15 more minutes.
Remove from heat and leave to cool.
Add eggs and remaining ingredients. Mix thoroughly to incorporate.
Pour mixture into individually greased and floured baking dishes.
Bake at 350 °F (180 °C) for 40 minutes or until toothpick comes out clean.
