In a large non-stick skillet, heat olive oil and sauté onion, garlic and sweet pepper for 2 minutes.
Add saffron, Flavour D’ Pot and rice. Stir to coat rice thoroughly.
Add water and bay leaf. Bring to a boil, cover and reduce heat to a simmer. Simmer for 15 minutes.
Remove cover and add remaining ingredients. Cover and cook for another 10 minutes or until seafood is cooked.
